This baked chicken breast is shown with a bit of parsley and a lemon wedge.

Baked chicken

Serves 4


4 skinless boneless chicken breasts  
1 cup wholemeal breadcrumbs  
1/2 cup matzo meal  
1 teaspoon low sodium salt  
1/2 teaspoon pepper  
2 eggs, beaten 
1 teaspoon toasted sesame oil


Preheat the oven to 180°C. 

Brush a baking pan with half of the sesame oil. 

Mix the breadcrumbs, matzo meal, salt and pepper together in a large bowl. 

Dip the chicken pieces in the eggs and then in the breadcrumb mixture until completely coated. 

Place chicken pieces on the baking pan and drizzle with the remaining sesame oil.

Bake in the oven for 45 minutes.
