A creamy bowl of potato soup is ready to be eaten.

Dairy potato soup

Serves 6-8


1 tablespoon olive oil  
1 cup diced onions  
3 cups cubed potatoes  
1 grated carrot  
3 cups water  
1 teaspoon low sodium salt  
1/2 teaspoon pepper  
1 teaspoon caraway seeds 
2 tablespoons farina  
3 cups skimmed milk  
3 tablespoons minced parsley 
1/2 cup low fat crème fraîche


Heat the oil in a large pan or soup kettle.

Brown the onions in the oil.

Add the potatoes, carrot, water, salt, pepper and caraway seeds to the onions.

Bring the mixture to the boil and stir in the farina. 

Cook on a low heat for 20 minutes. 

Stir in the milk and parsley and bring to the boil. 

Garnish with the crème fraîche.
