Potato latkes

Serves 8


2 eggs  
3 cups grated, drained potatoes  
4 tablespoons grated onion
1/2 teaspoon low sodium salt 
1/4 teaspoon pepper  
2 tablespoons matzo meal  
Low fat vegetable oil spray


In a large bowl, beat the eggs well. 

Add the potatoes, onion, salt, pepper and matzo meal to the eggs.

Spray the bottom of a nonstick frying pan with the oil and warm pan on a medium heat.

Drop one tablespoon of the potato mixture at a time into the pan. 

Fry the latkes until browned on both sides. 

Spray more oil into the pan as required during cooking.

Keep pancakes hot on a covered plate until all have been made.
