Salami and eggs served atop a bagel.

Salami and eggs

Serves 1


4 slices reduced fat salami 
2 eggs  
1/8 teaspoon low sodium salt  
Dash of pepper  
Low fat vegetable oil spray


Cut the salami into strips.

Lightly beat the eggs, salt and pepper. 

Heat the oil in a nonstick frying pan on a medium heat.

Fry the salami strips until lightly browned. 

Pour the eggs over the salami and cook on a low heat until the eggs are set on the bottom. 

Turn over, like a pancake, and cook until set.
